She Cooks:: Super Easy Garlic Hummus



Hello Ladies!! Cheri here with our first edition of  "She Cooks" for 2015!

I enjoy creating healthy & easy snacks for my family and friends and  with Superbowl right around the corner, we wanted to provide our readers with an easy snack to add to your game day spread.  After making this hummus several times,  I am hooked and will never buy store bought hummus again because it is so easy to make, I love the freshness,  and the flavor customizations are endless.  You can add in olives, green chilies, pine nuts, sun dried tomatoes, and etc.  Get creative & enjoy!!!


You will need
-Chickpeas-  You can cook a lb or your can purchase 2 cans of chickpeas
-1/4 cup Olive Oil
-1/4 cup of Sesame oil or Tahini paste
-Juice of 1 Lemon
-1.5 teaspoons of salt
-Sesame seeds
-1-2 cloves of Garlic

Place drained chickpeas, garlic, and salt into food processor and pulse.  Stop the processor and scrape down the sides.  Next you will add in your sesame oil and lemon and pulse again.  Continue to pulse while adding in your olive oil.  You should end up with a creamy textured hummus.  If the hummus seems a little too thick for your liking, you can add in 1-2 tablespoons of water to achieve the texture you desire.    Once you are doing pulsing, transfer to a serving dish, sprinkle the top with sesame seeds and sea salt.  Complete the dish by adding an optional drizzle of olive oil to your hummus and add your favor veggie, breads, or fruits to the side for easy game day dipping.  My new favorite personal pairing  is hummus & apple.  It is a healthier alternative to breads/crackers.  I love the fresh crispness of a sweet apple paired with a savory garlic hummus.  We hope you enjoy this recipe and if you do make your own hummus, #sheinspires on social media so we can see how you paired one of our favorite game day snacks.



My Favorite:: Snowball Cookies


You are probably busy wrapping gifts and finalizing your Christmas menu right about now, or like me packing for a little road trip.

I always get in the baking mood during the Holidays and I just can't stop.  I have packed two large containers of cookies to take to my family and look forward to baking with my mom on Christmas Eve. One of my favorites this time of year is snowball cookies.  My boys love when I make these, they have definitely become a tradition. *Beware of the mess they make when eating them!:)

Land O' Lakes Snowball Cookies

 All-purpose flour

2 cups finely chopped pecans

1/4 cup sugar

1 cup Land O Lakes® Butter, softened

1 teaspoon vanilla

Powdered sugar

Heat oven to 325°F. Combine all ingredients except powdered sugar in large bowl. Beat at low speed, scraping bowl occasionally, until well mixed.
Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake 18-25 minutes or until very lightly browned. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.

Fave:: Brownies Out Of The Box

My love for baking brownies on any given day, will never go away, and when I am lazy it's so easy to add a little extra to the mix, straight out of the box.  My favorite is the Duncan Hines decadent brownie mix/with walnuts. Of course adding a little more walnuts and then topping it off with semi-sweet chocolate chips is a must!  Since the weather is cooler right now, these make for the perfect fall treat with a glass of milk..

What is your favorite healthy snack on the go?

She Cooks:: Baked Asiago Squash

We are starting this hump day off with the first installment of "She Cooks", brought to you by the lovely Cheri.

Farmer's markets are in abundance with fresh organic produce this time of year.  There is nothing better than fresh veggies right out of the ground.  I love all varieties of squash and last week I decided to throw together a quick lunch with some of the fresh produce I had on hand from my Father’s garden.  Now, this recipe might need a little "tweaking" because I am that cook that comes up with an idea and I never measure anything.  I taste, add a pinch of this and that, taste again, and so forth, but I sort of measured this one so that I could share.
Ingredients:
2 yellow squash
1 zucchini
1 Tablespoon of Extra Virgin Olive Oil
1/2 cup chopped onion(optional)
1/8 teaspoon garlic powder or 1 fresh minced garlic clove.  You can always add more if you really love garlic
Salt & pepper to taste
Rosemary Asiago Cheese
Grab your mandolin and go to town, but use the guard.  I am speaking from experience of course.  Once you have your squash sliced, coat with olive oil, add your garlic, salt and pepper, and add to your baking dish.  I grated my cheese and sprinkled through the baking dish and then topped the squash off with more.  Bake in a 400 degree oven for about 30 minutes.  I will usually broil for the last minute so that I get a nice crisp on the outer layer.
